November and December is the harvest season for the olives. We had a first harvest on November 15th and a second one on November 26th. We learn that it is best to press the olives the same day as they are picked to guarantee optimal nutritional value. Thie means that in one day you have to collect minimum 200 kgs of olives, which we were able to do. The freshly pressed oil just tastes....divine!

We still have a third harvest on December 13th.
